Porkies was created by John and Byron after falling in love with BBQ. Two Perth chefs both living with North American roots and passionate about all things BBQ!
John has travelled over 42,000kms driving around the United States eating BBQ every chance he could. He attended Paul Kirk’s “Pitmaster College” to now have a Bachelor of Barbeque Science B.S.
In 2014 at the World Championships in Kansas, John became a qualified KCBS (Kansas City BBQ Society) judge.
The Porkies world class smoker “our hickory” comes from Cape Girardeau Missouri and was made right on the banks of the Mississppi River. All meats are locally sourced and smoked with Australian hard woods. With endless testing, 3 signature sauces have been designed in-house to compliment Porkies’ barbeque loving rubs.

El Asador translates in English as ‘the barbecuer’ and was founded in 2010 after owners Max and Emily travelled to Max’s homeland Argentina. John David Wheeler is one of the most award winning barbecue cooks in the world. The three-time world champion is co-pitmaster of the Memphis Barbecue Company and is a special international guest of the Yak Ales Perth Barbecue Festival in 2017.
Wheeler will be overseeing Memphis Barbecue Company’s stand at the festival, serving up their world-championship barbecue and pork ribs.
